Monday- Chicken Pot Pie
Tuesday- Tostadas with Homemade Refried Beans
Wednesday- Mandarin Chicken

Menu Week ending 4-26
Monday- Tacos
Tuesday- Homemade Pizza
5 1/4 c flour
¼ and a little c sugar
1 & 1/2 rounded T of instant yeast
1/2 T salt
Give the dry ingredients a mix
1 & 1/2 T liquid lecithin (found in the health department or at baking
stores)
2 c hot water
Mix for 1 minute and check consistency, dough should be sticky. Add flour or
water. Knead for 10 minutes. Spray pans, counter and your hands with cooking spray.
Cut dough in half and shape into loaves. Cover and let rise for 25 minutes.
Cook for 25 minutes, or until bottom is lightly brown. For Pizza Dough cook
at 425 degrees for 10 -12 minutes until bottom is slightly brown.

Homemade Whole Wheat Bread

Bread recipe
Preheat oven to 350 degrees5 1/4 c flour

Tuesday- Pork Loin with Lynn Huntley pork rub (Unfortunately our family did not like this to much so it won't be made again)
Pasta Roni White Shells and cheese

Wednesday- Stromboli (This was so good, I will use less cheese as Curtis and I both felt it was to cheesy, however, I didn't follow the recipe at all. I used Pepperoni, salami, ham, olive, mozzarella cheese, White American, and provolone. next time I will try it with plain lunch meat and make a few ahead of time and freeze.)
Chips

Friday- Country Farm Chicken Casserole (this was pretty good except I don't think there needed to have any additional salt added because I didn't use low sodium chicken broth. Other than that it was pretty good. Curtis even ate left overs.)

Sunday- Slow Cooker Salsa Verde and Green Chile Stacked Chicken Enchiladas
(This is an easy way to make enchiladas, But I make a pretty good Enchilada so i would probably use my recipe and just make it in the crockpot if i wanted to use the crockpot. I would add onions if I was to use this recipe again.)
